Straight answers, before you buy

Does the book give smaller recipes for one or two people?

Yes. The recipes give the family amount and a For Two amount with the smaller pan, so you do not have to divide awkward measurements yourself.

Does it explain why the old rules matter?

Yes. Each method explains what the flour, fat, liquid, heat and pan are doing, along with what you should see, smell, hear or feel and how to correct the bake.

Will the recipes work with store buttermilk, shortening and an electric oven?

Yes. The book works with an ordinary home kitchen and explains adjustments for the flour, weather, pan and oven without scolding you for what you have.

What kinds of baking are not covered?

This is not a restaurant pastry manual or a general cookbook. It stays with Pearline’s Delta biscuits, cornbread, rolls, tea cakes, cookies, pound cakes, quick breads, cobblers, dumplings, layer cakes, icings and church-table baking.
